Roman Ivlev
Roman is a chef with over 20 years of experience in the food and restaurant industry. He began his career in Siberia after earning a degree in Food Technology and completing an internship in New York where he lived for five years and gained valuable international expertise.
In 2003, he opened Calypso in Novosibirsk — a restaurant that quickly became one of the city’s most acclaimed and was awarded Russia’s Golden Crane as Best Restaurant in the country. A year later, Roman represented Russia at the IKA Culinary Olympics 2004 in Germany where the national team won a bronze medal.
He went on to lead some of Novosibirsk’s top restaurants — Bergamo, Leto, and Milk — managing a team of more than 120 staff. He also consulted for EDGE restaurant and launched Cheesefarm in Tomsk — now the region’s most successful dining destination.
Roman’s current mission is to create a world-class gastronomic experience at Cheesefarm in Dubai — with the goal of making it one of the UAE’s top ten restaurants.
